Chocolate Cupcakes

I was feeling a bit anxious earlier due to sleep deprivation. Our aircon conked out yesterday and had to be serviced today.

While waiting for the service crew to arrive, I busied myself with a bit of baking. I've been wanting to try a chocolate cupcake recipe that I saw on the net. It was pretty easy to do. I ended up making two batches to make 24 cupcakes. Most of which will be sent to my mom and my in-laws. Hubby and I can't possible eat them all. Ideally, cupcakes should be eaten at room temperature within two days of baking. After that, they can be refrigerated, unfrosted, for up to a week.





I was quite happy with how they turned out. The chocolate swiss meringue frosting was quite fussy to make and I was a bit skeptical if I can pull it off. I managed fine but it didn't have the rich chocolate-y color that I wanted, maybe because I used semi-sweet chocolate chips instead of the bitter-sweet that was required in the original recipe. Oh well, it tasted great anyway. It was light and fluffy and not too sweet, just the way I prefer it. The frosting kinda tasted like chocolate ice cream but without the melt factor.

Don't let her description fool you, folks. These chocolate cupcakes are good! Mom and my sister wolfed down three cupcakes during our short visit, and right in front of us! Her mom just barely managed to limit herself to one piece for one sitting...and I mean just barely!

Thanks! The icing was a huge hit :-) So far, this is my best cupcake.

Thanks! The cupcakes are pretty easy to make. The frostings are still a work in progress. I've been having trouble with the cream cheese and the white chocolate frostings. I can't seem to get them right. The swiss meringue is quite fussy to make but they are worth it and I got really good results in terms of "fluffiness" and taste.

Hi, Leica. This morning Poch and I learned that the famous Magnolia Cupcakes in Manhattan (you know, the one made popular by Sex in the City) was closed due to sanitary concerns. No sink and rodent sightings- would you believe! Well, I personally think you make better cupcakes and I know how fussy you are about cleanlines, so there. Go for it, girl!

Yeah, I'm quite fussy when it comes to cooking. All my baking equipment has to be washed and dried prior to and after baking. OC na yata ako.

I'm having a bit of trouble with the frostings though. I definitely need more practice. I guess you guys are gonna have to endure more of my experiments in the kitchen :-)
