Citrus Tequila Prawns

I came upon this recipe from whiteonricecouple.com I've already made this recipe twice, with some adjustments. One of which was at a party that we had at home with Hubby's boss and colleagues. This is a great and easy recipe and makes for a wonderful addition to your buffet table.

Citrus Tequila Prawns

3 kilos prawns
1 whole garlic, finely chopped
3 - 4 teaspoons Sugar
1/4 cup plus 2 tablespoons vegetable oil
1/4 cup plus 2 tablespoons Tequila (or more)
1/4 cup plus 2 tablespoons Kikkoman soy sauce
1/4 cup plus 2 tablespoons fresh lime juice
Lime zest
Cilantro sprigs
Bamboo skewers

1. Soak bamboo skewers in water to prevent them from burning when grilling.
2. Peel and devein the prawns but keep the tails intact. Set aside.
3. In a bowl, mix garlic, sugar, oil, tequila, soy sauce, lime juice and lime zest.
4. Add the prawns to the marinade and soak for about 20 to 30 minutes.
5. Skewer the prawns, three to a bamboo stick to make a nice presentation.
6. Grill over charcoal 2-3 minutes per side. Do not overcook!
7. Serve immediately and garnish with cilantro and squeeze some fresh lime juice before serving.

Simple Joys

My niece Ashley had recently learned how to bike without training wheels. One time, she invited me and Hubby to come over their house so that we can go biking.

I really enjoy doing this activity with her. She's such a jolly little girl and is so much fun to be with.

That expression on her face is priceless :-)

Thanks Hubby for snapping this picture. I love it.

Well... hello there :-)

I miss writing here in my blog. I don't know where to start! We've been to a lot of restaurants this first quarter of the year. Honestly, It has been a pretty interesting quarter.

We've had family from different parts of the world who came over, spent a few weeks here in the Philippines. We had tons of reunions. We met friends here and there also. It's always nice catching up.

I've been playing a lot too with my niece Ashley and I love it. She's a bundle of energy! I also enjoy talking to her. She's so funny!

Thanks for dropping by my blog. I'll update it soon :-)
